Beefsteak & Onions

This is a quick and simple entree derived from a Filipino dish called bistek, which is usually served with lots of caramelized onions. Unlike the Filipino version, however, instead of soy sauce, we can simply coat the beef in flour and sautee it in a light drizzle of olive oil. With a good helping of cracked black pepper, the overall flavor is not too empowering. It's super savory and goes well accompanied with rice or couscous.

Cook time: 30 minutes

Ingredients

  • 2 (2-lb) well-marbled boneless beef chuck pot roasts (1 1/2 inches thick)

  • 1 tablesppon olive oil

  • 1 1/2 teaspoons ground black pepper

  • 1 1/2 lb onions, halved lengthwise, then thinly sliced lengthwise (6 cups)

  • 6 large garlic cloves, finely chopped

  • 1/2 cup flour
     

  1. Dust the beef in flour, then set aside. Heat the oil in a large pan.
     

  2. Add the onions and fry for 5 mins. Stir in the garlic for the final few mins.
     

  3. Add the beef. Cover and cook gently for 2 hrs until the meat is tender.
     

  4. Serve scattered with parsley.
