Salmon en Croûte

This one's a bit time-consuming with its many steps, but it offers a rewarding finish by way of the yummy flavors and variety of textures! You can actually put whatever green vegetables you want in the envelopment. I've seen some recipes that call for putting pureed pea spread on the salmon. 

It's up to your taste!

Serves: 2

Prep time: 30 minutes

Cook time: 40 minutes

Ingredients:

  • 5 tablespoons butter

  • 1 cup kale, with the stems taken out

  • 2 (6-ounce) salmon fillets

  • 1 large egg

  • asparagus stems 

  • 3 cloves of garlic

  • 1/2 package frozen puff pastry, thawed 

  • 1 teaspoon cracked black pepper

  • Dash lemon juice, plus more to taste

  1. Lightly sprinkle olive oil and ground black pepper onto two salmon fillets.
     

  2. Pre-bake in the oven at 350 degrees for 20 minutes or until light pink.
     

  3. Chop kale into small pieces and asparagus to the length of the fillets. Sautee them with a bit of olive oil in a pan.
