Triple Berry Flaugnarde
I stumbled upon this recipe when searching for a recipe for clafoutis, a flan-like dessert of French origin with cherries baked in.
Since I'm not the biggest fan of cherries, I dug up a recipe that incoporated berries. Flaugnarde and clafoutis are very similar. Their only difference, I found, is that clafoutis are made only with cherries, and everything else is a flaugnarde!
I categorize this under simple because in under an hour, you can whip up this delectable treat! In fact, I make this quite often as I always have the necessary ingredients.
Key here is the texture, not so much the taste. The texture is smooth and silky, yet a bit dense, which holds the berries perfectly in place. It's exactly as many would describe it: a cross between a pancake and flan!
Serves: 6
Prep time: 15 minutes
Cook time: 20 minutes

1. Preheat oven to 375 degrees. Grease a deep dish pie plate with the butter, then add the berries and set aside.
2. In a large bowl, combine the flour, sugar, and salt. Whisk in the eggs, then add the milk, cream, and vanilla and stir until smooth.
3. Pour the mixture gently into the pie plate over the berries, place in the oven, and bake for 25 minutes, or until the custard has puffed and is set, but still slightly jiggly in the middle.
4. Allow to cool on a rack for 15 minutes, sprinkle with powdered sugar, then enjoy!
