Mint Sauce for Lamb

This sauce brings a melange of sweet and tart to the smoky flavor of your roast lamb. The finely ground mint carries a burst of cool freshness. You may experiment with the amounts of vinegar and sugar to shift levels of acidity or sweetness.
Ingredients

1/4 cup fresh mint leaves

2 teaspoons sugar

1 pinch of salt

1 tablespoon hot water

3 tablespoons of white vinegar

Combine mint, sugar, salt, and 1⁄4 cup boiling water, and stir until sugar dissolves. Add vinegar, and cover; let sit for 1 hour to meld the flavors.
